EASY TO MAKE NILAGANG BABOY (BOILED PORK SOUP)
With rainy season just around the corner, soups and broths are highly in demand at the dinner table. One of the dishes I like making is Nilagang Baboy (Boiled Pork Stew). It’s a comfort food that is most welcome during the wet season.
Usually served lunch or dinner, this easy to make dish, is a favorite of many Pinoys. Other cuts of meat can be used, but I prefer pork belly. The resulting broth from this cut is a lot more rich and flavorful.
Other than potatoes, cabbage and pechay, you can also add saba bananas. It adds a sweet element to the dish.
Nilagang Baboy
Ingredients
- 1 medium onion diced
- 500 g pork belly cut into 1 inch slices
- 2 potatoes peeled and cut into 1 inch cubes
- 1 bunch pechay cut into 2 inch strips.
- 1/4 head cabbage remove core and chop into thirds. Separate leaves.
- Salt and pepper to taste
- 2 pcs bullion cube
- 5 cups water
Instructions
- Combine pork, onion, salt, pepper, and water in a pot. Cook in high heat until it boils.
- Reduce to medium heat and let simmer for about 30 minutes. Cook until meat is very soft and tender that it will almost melt in your mouth when eaten.
- Add bullion cubes and potatoes. Cook until potatoes are tender, before adding in the rest of the vegetables. Cook for another 2 minutes.
- Taste, and adjust salt and pepper as needed before taking off heat.
COOKING TIPS
The key to this dish is to slow simmer the pork. It’s the difference between a good dish and a great dish. The pork doesn’t just need to be cooked, it has to be melt in your mouth tender.
SERVING SUGGESTION
Serve with steamed rice. Fish sauce with calamansi and red chili is a great dipping sauce. It complements and cuts through the richness of the broth.
