Sweet syrups are not staples in our pantry. I’m not going to buy a bottle of pancake syrup for the rare occassion that my husband requests pancakes for breakfast. Instead, I make sugar syrup.

Sugar syrup is very easy prepare. You literally only need 2 ingredients to make it. It’s more economical and practical for me to make some on the rare occasion we need sweet syrup, rather than buy a bottle that will sit in the pantry for a long time.

MAKE VS BUY

Pancake syrup costs around Php125/355ml (USD2.27) bottle. If I make 355ml (around 1.5cups) of syrup at home, it will only cost me the amount of sugar, which is Php24 ($0.5) for 1.5cups.

For those who want to flavor it with vanilla, the 20ml vanilla extract found in groceries, costs about Php50. A teaspoon (5ml) is more than enough. This will bring total cost to about Php37 ($0.67). Which is still a fraction of the cost of store bought syrups.

WHITE SUGAR VS BROWN SUGAR

Brown sugar has a bolder and richer flavor compared to white sugar.

White sugar will result to a light golden syrup, while brown sugar will turn deep dark brown.

I personally like using white sugar because of the lighter flavor. My husband though prefers the brown sugar version. So what to use will really depend on personal taste.

HOW TO MAKE SUGAR SYRUP

It’s really easy. Just combine sugar and water in a saucepan at low heat, stirring constantly until sugar is dissolved. Turn off heat and add vanilla flavor (optional).

I use the 1:1 ratio. 1 cup of sugar for every cup of water. If you like the sweeter version, make it 2:1. 2 cups of sugar for every cup of water.

COOKING TIP

If you want a thicker syrup, simmer it longer. The longer you cook it, the more water will evaporate, the thicker the syrup will be.

  • 0.5 tsp Vanilla extract optional

Instructions
 

  • Combine sugar and water in a saucepan and cook at low heat.
  • Stir continuously until sugar is fully melted.
  • Turn off heat and add vanilla flavor/ extract.
